I run a tab at Greens Eggs and Ham. That means I eat a lot more duck than the average person, which can be a pretty good thing! I found this recipe to make with a pair of duck legs I had in the freezer. I substituted hot mustard with Beaver jalapeno mustard, but otherwise followed the directions. Briefly, this meant roasting the legs at 350F for 45 minutes (I just threw them in a cast iron pan), then adding in a sauce (1 cup orange juice, some honey, pepper, salt, some mustard, coriander) and braising them for another 45. Remove the legs, then cook the sauce for a bit longer, thickening with a little corn starch in water.
In the meantime, I put some potatoes and beets in a roasting pan to cook while to duck was going. Then in the last 10 minutes, I sauteed some kale. WOW. So good, and a lot easier than I expected! Do it! Do it! Do it!
